posh chips

So wrong, yet so right!

Ah man, this one is a bold one.

I had meant to make this dish, which looked fairly balanced and quite nutritious, despite the frying part.

But I forgot to pick up the broad beans on my way home yesterday, so all I had were a few wee spuds, some pancetta and a bit of parmesan.

This recipe is not a friend of The Diet.

But it’s totally a new Guilty Pleasure.  I even managed to pair it with a sly episode of Sex & The City.  Hah! Double guilt.

What you need for Posh Cheesy Bacon Fries

A few baby or new potatoes, washed and halved

A few strips of pancetta, finely chopped

Olive oil and a little butter for frying

Parmesan cheese

Salt and pepper

Boil the potatoes until just cooked.

Add the oil and butter to a frying pan, and fry the potatoes until they are lovely and crisp and golden.  At least ten minutes on a medium heat.  You can add salt to the potatoes at this stage.

Add the pancetta to the pan and let the fat from the pancetta ooze out and seep into the potatoes….*ggrrrggslobber*  You can leave it all frying for another five minutes or so.

Drain off the excess fat from the pan and serve up the posh bacon fries with a smattering of parmesan cheese sprinkled over the top and a crunch of black pepper, for added poshness.  GUILTY!!

Here’s a little Guilty Pleasure track for you.  I know I shouldn’t like this song, but the die-hard cheeseball in me is crying out for more.  And the movie itself is another Guilty Pleasure – it was on telly not so long ago and it was hilarious.  I loved it. I’m such a loser.
